Analisis Risiko Pada Produksi Produk Sago One (Tepung Sagu) Sarodeceng

Abstract


Penelitian ini bertujuan menganalisis risiko pada proses produksi tepung sagu Sago One Sarodeceng untuk menentukan prioritas pengendalian risiko operasional. Penelitian dilaksanakan pada 7 Mei 2025 di Sago One Sarodeceng, Kota Makassar, melalui observasi langsung dan wawancara dengan pemilik usaha. Analisis risiko dilakukan menggunakan metode Failure Mode and Effect Analysis (FMEA) berdasarkan penilaian severity, occurrence, dan detection yang kemudian dihitung menjadi Risk Priority Number (RPN). Hasil penelitian mengidentifikasi lima risiko utama dalam proses produksi, yaitu keterlambatan bahan baku, cuaca buruk saat pengeringan, kerusakan mesin, keberadaan ampas sagu, dan tepung sagu yang berserakan di ruang produksi. Hasil perhitungan RPN menunjukkan bahwa kerusakan mesin dan tepung berserakan merupakan risiko dengan prioritas tertinggi (RPN = 20), diikuti oleh cuaca buruk (RPN = 16). Mitigasi yang direkomendasikan meliputi penyediaan komponen mesin cadangan, peningkatan sanitasi ruang produksi melalui pembatasan akses dan pemasangan exhaust fan, serta penggunaan mesin pengering sebagai alternatif ketika kondisi cuaca tidak mendukung. Hasil penelitian menunjukkan bahwa metode FMEA dapat digunakan secara efektif untuk menentukan prioritas pengendalian risiko pada usaha pengolahan tepung sagu.
